I was flipping through some sort of family magazine when I went in to the doctor's to get my meningitis shot, and came across an article about cucumbers. Supposedly you can gouge out the middles to make them into little floating canoes. It reminded me of this post, so I though I'd let you know.

I have a recipe that will take care of cucumbers AND tomatoes!! :) we love it, a great summer salad:

cooked penne
chopped/quartered tomatoes
pealed/chopped cucumbers
mayo
salt and pepper

mix to your liking -- a great complement to burgers or kabobs.

Well I'm making <a href="http://thepioneerwoman.com/cooking/2008/03/my_most_favorite_salad_ever_ever_ever_ever/" rel="nofollow">this</a> for Friday lunch, but that only gets rid of probably one cucumber.
